Ingredients: 3 cups of ¾-inch cubed peeled butternut squash, 1 tablespoon of olive oil, ¼ teaspoon of turmeric, ¼ teaspoon of cumin, ¼ cup of grapeseed or vegetable oil, ¼ cup of apple cider vinegar, 2 tablespoons of Greek yogurt, 1 tablespoon of maple syrup, 1 shallot (minced), 1 bunch of kale (stems and center ribs removed and leaves cut cross-wise into slim slices), 1 pint of Brussels sprouts (cut crosswise into small slices), a handful of toasted pumpkin seeds or sunflower seeds, 1 avocado (pitted, peeled and diced), and salt and pepper to taste

Step 1: Preheat the oven to 425 degrees with a rack in the middle position. Then, place the squash on an 18-by-13-inch sheet pan and sprinkle it with the olive oil, turmeric and cumin. Then, season with salt and pepper. Afterward, use your hands to combine everything well and spread the squash across the pan.

Step 2: Roast the squash for about 15 minutes until lightly browned on the bottom. Then, toss the squash in the pan. Afterward, cook the squash for about 10 additional minutes until it is tender. Let it cool for a few minutes.

Step 3: In a small bowl, whisk together the grapeseed oil, vinegar, maple syrup, yogurt, and shallots. Then season the mixture with salt and pepper to taste. 

Step 4: In a separate, larger bowl, combine the roasted squash, brussels sprouts, kale, and pumpkin seeds. Next, lightly drizzle the salad with dressing. Then toss to combine and coat everything evenly. Finally, add the avocado and gently toss again. Enjoy!

Kale, Quinoa, and Strawberry Salad

Ingredients: 1 teaspoon of minced garlic, 1 tablespoon of extra-virgin olive oil, 2 teaspoons of red-wine vinegar, 3 cups of lightly packed baby kale, ½ cup of cooked quinoa, ½ cup of sliced strawberries, 1 tablespoon of salted pepitas, a pinch of ground pepper, and a pinch of salt

Step 2: Next, add the kale to the mixture. Then, toss to coat everything evenly.

Step 3: Serve the salad, topped with quinoa, pepitas, and strawberries.

Ingredients: 1 medium clove of garlic, 6 heads of lettuce, ½ cup of crumbled blue cheese, 3 pieces of bacon (cooked and crumbled), 2 scallions (thinly sliced on the diagonal), ¼ teaspoon of kosher salt, and ¼ teaspoon of ground pepper
